Uncooked Christmas Cake Recipe
This Christmas slice comes from "No-bake ways for easy days", a cookbook complied by the ladies living on Rotoroa Island during the 1980s. There are some lovely nostalgic recipes in here, including this twist on the ubiquitous Christmas cake.
INGREDIENTS
3/4 cup chopped prunes
3/4 cup chopped peel
3/4 cup chopped raisins
1/2 cup chopped cherries
1/2 cup sultanas
1/2 cup chopped walnuts
1/2 tsp nutmeg
1/4 tsp mixed spice
1/4 tsp cinnamon
1 tsp vaniila essence
1 tsp amond essence
2 tablespoons honey
115 grams of butter
4 cups biscuit crumbs (malt, superwine, gingernut etc)
Warm together honey and butter, and mix with all ingredients except the biscuit crumbs. Let stand for two hours. Add crumbs, press into tin and ice with flavoured icing of your choice (try almond essence).
